Ooey Gooey Carrot Cake Ingredients needed:

Carrot Cake Mix

Eggs

Butter

Vanilla Extract

Cream Cheese

Powdered Sugar

Pecans

As you can see these are very simple ingredients and this cake comes together very quickly! It’s great for any gathering and always a hit. Make this for a brunch, cut into squares and enjoy! This ooey gooey carrot cake is super easy to make!

  • 1 Carrot Cake Mix
  • 2 eggs
  • 12 tablespoons butter or 1 1/2 sticks melted
  • 1 teaspoon vanilla extract

Topping Ingredients

  • 1 8 ounce package cream cheese, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 1 cup of pecans chopped
  • Do not make this cake according to the directions on the cake mix box. Mix the cake mix, eggs, melted butter and vanilla extract by hand in a mixing bowl. Spray a 9 x 13 cake pan with cooking spray and press the cake mixture into the pan. This makes the bottom layer of the cake.

  • Topping Instructions

  • Mix the topping ingredients with a mixer and spread over bottom cake layer.

  • Bake cake in a preheated 350 degree oven for 40 to 45 minutes until top of the cake is golden brown. Cut in squares to serve.
