Pecan Praline Recipe

If you love old-fashioned recipes, you will love these Kentucky Bourbon Balls. They are always a hit, and if you are not a bourbon fan… no worries, we share how to make them without it!

❤️WHY WE LOVE THIS RECIPE

Well, as you know, this is a Southern website, and we love Southern recipes. Pecans are very southern, and these Southern Pecan Pralines are classics. Any dessert made with brown sugar and pecans is always going to be a winner!

🍴KEY INGREDIENTS

  • Pecans
  • White sugar
  • Brown sugar
  • Buttermilk
  • Butter
  • Vanilla extract

SWAPS

We make this recipe with buttermilk, its always going to be our go-to ingredient when you are looking for a heavy fat in a recipe. You can swap it out with heavy whipping cream or evaporated milk; both are heavy and will work too. We have always stuck to buttermilk, though.

🍽️HOW TO MAKE

Organize all of your ingredients first, and if you plan to use a candy thermometer, get that ready too.

COOKING STEPS

Step 1
Combine pecans, white sugar, brown sugar, buttermilk, and butter in a good-sized pot on top of the stove.

Step 2
Bring to a boil on medium-high and cook to soft ball stage.  (Soft ball stage means drop a small amount in ice water and it forms a soft ball when you pick it up out of the water and roll between your fingers)

You can also use a candy thermometer and cook to 234 degrees. Remove pot from heat, stir in vanilla extract, cool for a few minutes, and beat with a spoon until it becomes thick and creamy.

Step 3
Drop by spoonfuls onto wax paper.  Makes 12 to 15 pralines depending on size you make them.

⭐TIP

Figuring out the right consistency can be tricky and if you don’t get it right on the first try, no worries, you can use the mixture over ice cream, waffles, etc. Candy making isn’t easy and it’s a learning process. Making pralines or any candy that you have to boil to get to the right consistency can be frustrating, but once you learn the consistency, you will be good to go!

❓FREQUENTLY ASKED QUESTIONS

Is this the same as candied pecans?

No, it’s not the same thing; candied pecans are made differently and are just the nut.

Do I have to use buttermilk?

Many pralines are made with heavy whipping cream or evaporated milk. I have never made them that way but you can give them a try.
